Carboxymethyl Cellulose (CMC) forming a gel
CMC forming a gel provides advantages in a large variety of applications disclosed further below. Due to gel formation the CMC provides excellent water retention properties and gelling behavior to compositions comprising the CMC. CMC forming a gel is particularly useful as a binder, gelling agent, stabilizer, emulsifier, film forming agent, suspending agent, protective colloid, or crystallization inhibitor.
The excellent water retention properties of CMC forming a gel lead to improvements in a variety of end-uses, such as storage stability, excellent texture and juiciness in food products over an extended period of time; high gelling ability in cosmetic applications, such as hair styling products; and excellent properties as binder, gelling agent, stabilizer, emulsifier, film forming agent, suspending agent, protective colloid, or crystallization inhibitor in pharmaceutical applications or in industrial applications, such as coating compositions or drilling applications.
CMC forming a gel provides particular advantages in pharmaceutical applications, such as in or as peroral solids, capsules, tablets, controlled-release dosage forms, oral solutions, syrups, elixirs, oral suspensions, emulsions, magmas, gels, parenteral medications, sterile fluids, transdermal drug delivery systems, ointments, creams, lotions, ophthalmic, nasal, otic and oral preparations applied topically, suppositories and other rectal, vaginal and urethral preparations, aerosols, inhalations, sprays, coating processes, tablet pressing, granulating processes, radiopharmaceuticals, disintegrants or binding agents.
CMC forming a gel is also very effective as a binder, gelling agent, stabilizer, emulsifier, film forming agent, supending agent, protective colloid, or crystallization inhibitor in dairy products, such ascream cheese, cheese, ice cream, other frozen desserts, curd, yoghurt, (acidified) dairy based drinks, cream, whipped cream, milkshakes, dairy desserts, processed cheese, or mayonnaise; and in beverages, such as fruit juice based drinks, yoghurt drinks, whey drinks, milk/juice blends, instant mixes for drinks, beverage emulsions, alcoholic beverages like wine, dairy based alcoholic drinks, hot drinks, e.g. instant cappuccino, cacao drinks, and also beverage concentrates; or in water-based desserts.
In view of the above-mentioned properties CMC forming a gel is also very useful in bakery products including filling, such as bakery fillings, e.g. fruit fillings or cream fillings; pastry filling, glazes, bakery toppings, bakery coatings, frozen dough, a wide variety of breads, gluten free bread, morning rolls, pizza dough, flat bread, frozen bakery goods, tortilla, cakes, either in the form ready to be consumed or in the form of powder mixes, spo...
