An oral temperature probe comprises a housing having a probe tip and containing a non-contacting IR sensor, such as a thermopile, to measure the temperature of tissue located in the oral cavity such as the sublingual pocket. The output of the sensor may be processed to provide a digital output indicative of core body temperature, or to provide another signal appropriate for display via a monitor.
